Summer calls for light, refreshing meals that are easy and fast to make without sacrificing on flavour. This green veg and feta smash with mint fits the bill perfectly. You've got the sweetness from the peas, tangy-ness from the feta and freshness from the mint. You can make a salad bowl full for BBQ's or top sliced and toasted ciabatta for small canapés.
Serves 4-6 | 15 minutes
- 300g Frozen (or fresh) Broad beans, podded
- 200g Frozen peas
- 100g Feta
- Small handful of fresh mint leaves
- 1 lime - zest and juice
- 2tbsp Olive oil
- Sea salt + Pepper to season
Add the broad beans into boiling water, after 3 minutes add the peas and cook for a further 2. Drain and blanch. Finely chop the mint and set aside. Drain the broad beans and peas and put into a large clean bowl. (if broad beans still have the bitter outer skin, remove them). Season with salt and pepper and roughly smash with a fork. Using your hand, crumble the feta into the bowl. Add the juice and zest of 1 lime, mint, and olive oil and mix. It's ready to serve as a salad.
If you wish to serve it on bread: Set aside whilst you toast some bread. I opted for seeded bread but you can use anything really - sliced baguette, sourdough or pita. Once you've topped your bread with the mix, drizzle some olive oil, garnish with tiny fresh mint leaves and serve with a wedge of lime on the side.
